Bonajuto's orange bar carries dried Sicilian orange peel through cold-worked chocolate made in Modica, at a minimum of 65% cocoa. The peel gives a zesty, slightly bitter lift against the cacao.
Orange and chocolate is a pairing everybody knows, which makes it a fair test of a producer. Real peel behaves differently from orange flavouring, and you can tell.
