Bonajuto's sea salt bar puts salt and sugar together in the same bar, at a minimum of 80% cocoa. The result is richer and stranger than it sounds, and it has the strongest personality of the range.

At 80% cocoa there is very little sweetness to soften anything. The salt lands first, then the cacao arrives behind it.
