Anchovy Colatura by Testa Conserve is the liquid drawn from anchovies as they cure under salt, collected in a 100 ml bottle. It is one of the oldest seasonings in the Mediterranean and a direct descendant of Roman garum.

A few drops replace both the salt and the stock in a dish. Use it raw, off the heat, because cooking it takes away the reason you bought it.

How to enjoy
