Bonajuto White Chocolate Bar

Bonajuto's white chocolate bar is made from four ingredients, cold-worked in the Modica method to produce a flavour and a texture that white chocolate does not usually have. It contains milk.

White chocolate is normally smooth to the point of blandness. Worked cold, the sugar stays crystalline and the bar has grain and resistance instead, which is the whole argument for making white chocolate this way at all. It is the newest of the Bonajuto bars and the one that divides opinion.
