Bonajuto's 70% bar is cocoa mass and sugar, and nothing else. It is the plainest reading of the Modica method and the bar that shows the technique with nothing laid over it.

With no flavouring to hide behind, the texture becomes the subject. The sugar crystals stay whole because the cacao is never heated enough to dissolve them.
